I myself also have Candida and done the silver/aloe protocol to rebuild my intestinal lining and have taken Dr. Ohhira's probiotics and another brand of probiotics and also drinking homemade oranic raw milk kefir sometimes 2 times a day to help the process. I just tested myself this morning with spitting in the water to look for jellyfish and they were still there, although not as much as before. As far as the small bits in your kefir that looks like cottage cheese...yes, they are baby kefir grains. Do not eat them if you want your kefir to multiphy, strain them and put them back into the jar with new milk. Don't wash the jar, just keep using it over and over again as there are baby kefir grains that stick to the sides of the jar. Also, use a FINE mesh strainer to strain the kefir like this one from Cultures for Health. http://www.culturesforhealth.com/plastic-mesh-strainer-1.html Do not mash them into the strainer, but instead tap the strainer hard against the side of the bowl or large measuring cup (I use an 8 cup measuring cup from Corning) and the kefir goes right through, even the really thick kefir. Do NOT use a metal metal strainer as aluminum reacts (but I think a temporary of stainless steel is ok). Do NOT use silicone strainer or utensils as it's been shown to shrink your grains. I hope this helps, Al Kefir Newbie: a few questions Hi- I just started making and drinking milk kefir this week. Two questions so far: 1. How often each day can/should I drink kefir? Does it lose its benefit after drinking too much? Right now I've been drinking 8 ounces a day. I've been on a candida diet due to infections I've had, and suspect I really need to recolonize my digestive tract. I'm hoping the kefir will help with that, so I'd like to drink as much as I can to help the process along. 2. When I strain out the kefir grains, there are all sorts of new little pieces--like cottage cheese. I have been drinking those. Are these actually new kefir grains?
