I was about to open the jar of pure whey (from straining kefir) and make pancake mix for the morning, when I noticed the perfectly clear liquid had a slight greenish tint. I took this picture of the jar in dark room with a blacklight. I should have placed a jar of dionized water next to it for comparison. Does anyone have a blacklight to photograph their water kefir? I know urine will fluoresce and scorpions have something in their skeletons that fluoresce this same color green. Somewhere in the archives of this group someone posted the list of proteins and such found in our whey. I'll search for that later. If anyone is interested in doing this little experiment on water kefir, I think it would be interesting to know if compounds in milk whey having this optical property are also found in water kefir.
