I have found that my kefir grows better in pasteurized milk, but that idea is up for discussion. The thinking is that the kefir that we have has been adapted to pasteurized milk for 10,000 kefir generations. That is plenty of time to be adapted to pasteurized milk. Don't you ever smell like kefir. Even my skin sometimes smells like kefir. I can't afford raw milk. I tried it and it was just too much for us. My wife gave me a hard time for paying for " milk " at about $10.00 per gallon, not counting transportation. We can get pasteurized milk at Costco for less than $2.00 per gallon. Pasteurization just came about in the 19th century. To each is own I guess if you prefer pasteurized milk to�raw milk soley because of price then�I can't argue with you on that. If these factory foods are that bad, and I avoid factory foods to a very large extent, then we would be seeing people drop dead left and right, not the mere 400,000 per year. When I learned about kefir, I started using milk again, but it is pasteurized milk from the grocery store. It is extremely impractical for me to get raw milk. I believe that kefir cultured pasteurized milk is good. But I am wondering, if you would advise against dairy if a person is not able for whatever reason to obtain raw milk? Contrary to popular belief, losing brain function as you age is NOT NORMAL for anyone. I do not think people should consume pasturized dairy that is not fermented. The antibiotic word always seems to get into the line up of negative words describing store milk.
