Guest guest Posted April 14, 2012 Report Share Posted April 14, 2012 I have diabetes, so I monitored my blood glucose levels after drinking water kefir. It did not rise. I thought I'd do an experiment: I set up a new batch today. After mixing my sugar water with molasses, I measured the glucose level: it was 377. The 4 day old kefir registered at 57! I think that is pretty incredible. Now I am wondering whether it is okay to eat extra grains - that would be more difficult to measure. Maybe I could puree a few. It wold be super interesting to see if your glucose rises after eating, say, a tablespoon of grains? When I eat mine they are not very sweet, they only seem to have kefir liquid residue that sweetens them. For the most part they are a gelatinous taste, like unflavored gelatin, so I think they may have some protein and cellulose (fiber?) as they are live " plants " , but little else.
