Time has now passed, and I recently got a culture that came directly from Italy...AWESOME culture! FAST growing, and am getting nice thick keifer in 24 hours. So am increasing culture while I can. I have dairy goats, and am using that milk for keifer. Raw, filtered, fresh from the milking.I am using the keifer I and am pleased with it. I am also using in my homemade breads - takes a little longer to cook but is fine, and more nutritious then water (minerals and such). WHAT I WANT TO MAKE... is keifer-gar, vinegar made with keifer. I saw a reference to it recently and cannot find it again, but would love to make it. If ANYONE knows how to make it with milk keifer, PLEASE let me know. Or I will have to experiment - good thing I have chickens that appreciate everything I send their whey?
