We have run many different experiments with many different results with many different raw materials under many different situations. I would like to know how you all use xanthan gum??? We have had a few trials that seem to " go off " after a week in the hot weather. Does anyone use xanthan gum in any products and use a pasteurizing or canning type method when using xanthan??? or just plain & simple blend in hot or cold, preserve???
