My hubby found out that he has allergies to a multitude of foods and trying to find something to eat for him is like finding needles in a haystack. He has tested allergic to all grains except rice and beans. Turnips, chocolate and milk products as well as eggs. All that leaves is meat and vegetables pretty much. Thankfully, he loves beans so he has had a lot of beans cooked with ham hock with Frito's and/or specially made cornbread. There are substitutes for some of the ingredients we use but some of them there just isn't. Tonight we tried to do salmon patties without the crackers and egg to bind it all together. We used potato flakes hoping that it would also do the binding but it didn't. The flavor was more fishy than when you have crushed crackers and an egg. I thought maybe I could use a mashed banana in place of the egg but not too sure that it wouldn't change the flavor quite a bit. Of all the substitutes I have found it sounds like it would do the binding most effectively. I'll have to give it a try after grocery shopping again. Until there is a drastic change in our diet we don't realize how many things are not just the ingredient that you thought they were. So many things contain soy which is a grain, and anything made that is baked usually has wheat or white all purpose flour including crackers and snack stuff. The only chips that we found to use are Frito's which are only corn and oil. Regular chips are fine as well but watch for the ones that are flavored or use wheat in them or use flavor and spices given from grains and cheese. Take out any milk products from the dairy section and then add the soybean oil to the list and you really don't have much of anything left. Then add to that he is diabetic (diet controlled) so regular sugar that is in a lot of stuff is off limits as well. He also has had several small strokes so we need to stay away from animal fats too. Isn't life such fun???
