Manufacturers are scrambling for products to replace hydrogenated fats. Palm kernel oil is one of the most likely replacements. Palm kernel oil consists of about 80% saturated fatty acids (4% C10:0, 48% C12:0, 16% C14:0, 8% C16:0, 3% C18:0, 15% C18:1, and 2% C18:2). It is high in myristic (C14:0) and palmitic (C16:0) acids which increase cholesterol. Here is the web site of a manufacturer with some information about the new products.
