They only seem to be available fresh around here in the fall. But they are available canned year round. One benefit is that they contain about half the calories of potatoes for a given weight. Also they contain much less starch than potatoes ........ for those who like to avoid starch where possible. The color suggests an anthocyanin content, and their ORAC value is (I believe) much higher than it is for potatoes. But the only vitamins they have more than their fair share of seem to be vitamin C, B6 and folic acid. And they would be excellent for anyone suffering a manganese deficiency. Any thoughts? Rodney.
