Guest guest
I use frozen immature beans. Aflatoxin is always my concern. That's just one. Wash the rice twice. regards. [ ] Mycotoxins on dried beans "...12 types of dried beans were examined. The incidence of molds on NSD beans of each type approachedor exceeded 90% of the beans examined, indicatinga high level of surface contamination. Althoughsurface disinfection substantially reducedthe number of beans with viable mold, there was considerable mold invasion; the incidences, except for the one lentil sample, rangedfrom 16.7 to 58.2%."http://www.pubmedcentral.nih.gov/picrender.fcgi?artid=187018 & blobtype=pdfDried beans make up a fairly large part of my diet, but this find hasme a little concerned. Are mycotoxins on dried beans a food safetyconcern? Should we limit consumption on this basis? I wonder if CANNEDbeans are also susceptible to mold formation? Would canned beans be abetter choice? bill
