The sodium hydroxide reacts with the oil to produce say sodium olivate and glycerine. The chemical composition of oils is different and there may be more or less glycerine depending on the individual oil I suppose. The actual quantitiy of lye only makes a difference as to the amount of oil which gets saponified.
