Guest guest Posted November 9, 2007 Report Share Posted November 9, 2007 Chocolate or Carob Confection Adapted from the book, The Raw Gourmet 1 cup almonds 1 1/2 cups raw carob powder or raw cacao powder 2 tablespoons pine nuts 1/2 cup unsweetened shredded coconut 1/4 cup agave or more for taste and consistency additional cacao or coconut for garnish Don't soak the nuts. In a food processor process the almonds until finely chopped. Add the cacao, pine nuts and coconut, process until mixed. Add the agave syrup gradually to the almond mixture while the food processor is running. Process until well mixed and a dough is formed. Add additional agave to form a dough or for sweetness. If it is sweet enough, then use water until you have a nice dough. Roll into balls. Roll the balls in carob/cacao or coconut, or ground almonds or some of each. Yields 24-30 pieces. Variations: use soaked dates or soaked dates and raisins as the sweetener. Use with walnuts or pecans.Use macadamias instead of pine nuts.
