Guest guest Posted December 21, 2007 Report Share Posted December 21, 2007 Date-Nut logs adapted from my book, The Raw Gourmet 1 1/2 cups dates, soaked 20 minutes, pitted 1 cup pecans, almonds or walnuts 1 cup unsweetened grated coconut 1 teaspoon cinnamon 1/2 teaspoon vanilla In a food processor process the nuts until finely chopped. Add the coconut and briefly pulse chop until mixed, add the cinnamon and vanilla. Add the dates a few at a time, processing until well mixed. Transfer the mixture to a large bowl and knead. Roll the mixture into finger shaped 3 inch logs, or roll in balls. Refrigerate. This confection will keep in the refrigerator for up to two week, or longer in the freezer. Yields approximately 24 pieces. Lemon DropsAdapted from a recipe by Sheryl Duruz 2 cups raw cashews 2 cups unsweetened grated coconut 3/4 cup fresh squeezed lemon juice 1/4 cup lemon zest (this is a lot of zest (the outer bit of rind, yellow only, finely grated) it will take all the lemons from making the juice, be sure to zest, then juice) 1 teaspoon good quality lemon extract 1/4-1/2 cup agave syrup If you have a powerful blender (K-Tec or Vita Mix) do up in the blender it will be faster, if not do up in a food processor.
