Guest guest Posted April 2, 2008 Report Share Posted April 2, 2008 20-Minute Healthy Soup2 boxes winter squash, frozen unless you have fresh (have subbed zuc)1 boxes corn, frozen unless you have fresh2 large tomatoes, peeled and chopped OR 1 large can tomatoes cubed 1 large onion chopped 1 tsp fresh grated ginger 1 tbs chopped cilantro or parsley1 quart chicken or veggie broth (or your own homemade broth)Saute the onion in 2 tbs olive oil until tender. (Omit if you like them raw)Add tomatoes and stir for about 3 minutes. When this basic sauce is done, add salt, pepper andgrated ginger. Add 1 quart of the broth you prefer and the vegetables. Boil for 10 minutes, correct seasonings, and add thechopped cilantro (or parsley) with the burner off. As a variation, add at last minute fresh chopped spinachinstead of the greens.
