The question is, I have a juicer of my own and I'm wondering what vegetables in the V-8 provide the high potassium. Guest guest Posted February 20, 2008 Report Share Posted February 20, 2008 I did some research for you. Amazingly, there are many, many sources of potassium, not just bananas! For juicing, add a small potato, I found out it's high in potassium. Also carrots, beets and celery are good. When I juice I juice a whole bunch of carrots, 1 beet, 2 sm. or 1 very large apple, celery (now that I found out it's high in the RIGHT kind of sodium), a piece of celery root (celeriac), a jerusalem artichoke or sunchoke (if the store has some at the time), a zucchini (don't peel it, the peel is high in vitamin K), a small bunch of parsley, and, in the growing season, I raid the peppermint/spearmint patches for a few leaves, and also the weed chickweed is excellent and tastes great (of course, make sure the lawn hasn't been " treated " ). I sometimes juice white turnips (the sweet kind) when they're available. Another food high in potassium is canned tomatoes..............so that's why I've been craving eggplant parmesan and had it twice recently!! I also juice organic oranges and grapefruit, also high in potassium.
