Guest guest
Safe to assume you used raw brocolli to start with? That will make it nasty-it needs to be steamed BEFORE you put it in the Vitamix-cooking the blended soup won't do the trick. Try with cooked brocolli and you should taste a HUGE difference-raw rarely works with any veggie going in to a hot soup. I steam three or four heads of cauliflower (or brocolli) at a time, then store the steamed florets in mason jars in the fridge, so they are ready to chuck in the Vitamix whenever I want soup...which is OFTEN! Its likely the raw onion in yours didn't help either. Some people roast their veggies in foil packets before blending, but I prefer steaming.Sent from my iPadOn Jan 8, 2012, at 6:07 PM, "powerserve111" <onetothreebees@...> wrote: Just got my VM 7 weeks ago, going GREAT! BUT...Tried making broccli cheddar soup. Broth, onion, broccli, cheddar cheese, alomond milk, and seasoning. I let it run till it got hot about 4 min. It tasted horrible. The texture was too way way too foamy. Im assuming becuase I let it run so long and the broccli tasted too raw so I tried to cook it still BAD. Anyone have any successful soup recipes? Im very disappointed. Thanks!!
Guest guest
Hello Powerserve ;-)Did you follow the recipe in the cookbook? I'm pretty sure that recipe calls for cooked broccoli. I always cook (steam, saute, roast, etc.) cauliflower, collards, kale, carrots, asparagus, (I'm sure I've forgotten some) before making into soups except, for some reason, my Tortilla Soup tastes great and I can use raw veggies going in (but relatively small amounts of each veggie). Also, here is an FAQ page from my website which covers the "foaminess" issue:http://vitamixlady.com/faq/Hope this is helpful - let us know if you have any more questions! Guest guest
is absolutely right (as if anyone doubted that-hee hee). I would never use raw broccoli, with one exception-I will add a small piece to a fruit and veg smoothie for breakfast, where the broccoli will not be the dominant taste. I saute my onion and sometimes garlic in a bit of evoo before adding it and steamed broccoli or cauliflower to soup.
