Pumpkin is one of my staple foods, and is very healthy and nutritious. You CAN

eat pumpkin raw, no harm in it, but I find it to be too starchy and floury. I

prefer it cooked. Throwing some raw pumpkin seeds in your smoothies is a great

way to get the raw nutrition of them, if that is your goal. If you just want

the pumpkin for body and a base, it is better cooked. I roast WHOLE pumpkins in

my solar oven (can do them in a slow cooker too) for easy handling. By roasting

whole, you eliminate the need to saw through the hard shell-it splits open

beautully and easily once it is cooked, and you can easily scoop out the seed

mass and puree the flesh. I puree it in the Vitamix, then put it in ice cube

trays and freeze into cubes, which I then transfer to a mason jar for storage,

so I always have cooked pumpkin on hand to toss in a smoothie, ice cream or

baked goods-also makes a lovely soup!

I dehydtrate the cooked sreds, sprinkle with sea salt and gobble them up!

Sometimes I will cut a whole pumpkin and keep the seeds raw, but they are

delicious cooked and crisped back up in the dehydrator too-and MUCH easier to

contend with!

Yes, I just put the gooey stringy mass in a strainer after I cut the cooked

pumpkin, let it air dry for a little while, then scrape off the strings with a

fork, sprinkle the seeds with sea salt then dehydrate on high overnight. Yum!

not all pumpkins are equil. The big pumpkins that you see for halloween are not that good for eating as the smaller varieties, sometimes called pie pumpkins. The large ones that are almost exclusively at grocery stores are poor grade for eating. Get the smaller, darker pumpkins for pies or eating.

Try fresh yams in your smoothies. I use raw butternut squash in mine, gives a wonderful texture. I do cook a lot of butternut squash for my animals so do add the cooked to my smoothies also. I feed it to my dog, canaries and tortoise, they all love it.
