Try a southwest or taco seasoning instead of Mrs Dash. I have eaten leftovers but it is better fresh. I'm sure some food geek will chime in on the enzymes breaking down etc. when it sits for a few days. Tony question re my attempt at soup I finally got moving and dusted my vitamix off and tried soup.I have the large container.I had a small ziplock bag of tomatoes I had frozen (probably 2 cups) When I defrosted them there was a fair bit of water.I addeda small piece of garlica little chopped onion1 celery sticka handful of salada handful of spinachsprinkle of mrs dashsome vegetable seasoning1 tble flax seed1 tble chia seedIt wasn't too bad and it was quite thick.Here's my questions so I understand a bit more about this for next time.Can you make any suggestions to improve it?I'm assuming that the thickness came from the chia or flax...is that true?I eat 1 cup for a meal and probably ended up with at least 3 cups maybe 4. Guest guest Posted February 3, 2012 Report Share Posted February 3, 2012 I have always heard you shouldn't re-freeze food that's been previously frozen (your tomatoes), so it might be better to just use it over the next couple days. Chia usually makes things creamier, so that could account for the thickness. If too thick just add water. It didn't taste so bad...but I'm sure it can be improved and hope to get some feedback on what I can do. If I can't freeze something I can see that becoming a problem because with the big container you have to put a fair bit in...I will be eating some of it for days. Guest guest Posted February 4, 2012 Report Share Posted February 4, 2012 The biggest thing I can see " wrong " (and I mean that in the spirit in which you asked the question) is that it has lettuce in it. Lettuce is the ONE food that you NEVER see canned, dried, frozen, and rarely cooked-that is because it is so high in rapidly declining enzymes, that it simply doesn't keep well. If you were to make your soup without the lettuce, you could freeze leftovers in ice cube trays and transfer them to zipper freezer bags for future use, adding your fresh lettuce in at the time you reprocess them. Lettuces tend to get slimy very quickly, due to the rapid enzyme release, so adding them at the moment of consumption is pretty much the only way to get a good result. The " thickness " that comes as the lettuce breaks down, is really just a sort of " slime " forming as the enzymes release-not harmful, but not the most pleasant either. I grow tons of lettuces of various kinds in my gardens, both indoors and out, and have tried many ways to " preserve " them-with not-so-good results. I finally just started growing mostly " cut-and-come-again " type lettuces, where I can cut off what I need AS I need it, and the leaves will keep growing.
