Chocolate Almond Butter

For those who have Sam's Club memberships, they have a cocoa coated almond mix

http://www.samsclub.com/sams/shop/product.jsp?productId=180937

• Dark Chocolate flavor

• Kosher

• 38 oz. resealable plastic jar

• Ingredients: Dry roasted almonds, modified food starch (potato), natural &

artificial flavors, cocoa powder (processed with alkali), salt, acesulfame

potassium, sucralose. Contains: Almonds.

The chocolate is a powder coating - not chocolate. For those who aren't worried

about the food additives, this was fast and easy. For those who ARE concerned,

I would think that just roasting your own Natural Almonds in coconut oil (toss 3

cups of natural almonds in a large zip lock bag, then add a tablespoon or two of

coconut oil, spread on a cookie sheet and bake for 14 minutes in a 350° oven)

and adding a tablespoon of cocoa powder with sweetener of your choice would be a

good substitute.

If you add the cocoa powder to the bag before roasting - with a sweetener like

honey perhaps - you could make your own " Cocoa Coated Almonds " to munch on! I

do something similar with honey and cinnamon. Stevia isn't supposed to be

heated :-(

I turned these nuts into an almond butter for the show. It blended quite easily

(as compared to raw or " natural " almonds) and was a huge hit with the audience.

Use 3 cups (no more/ no less) and make the Almond Chocolate Nut Butter following

the nut butter instructions here:

Why isn't stevia supposed to be heated? I've read it's fine to even bake with

(just difficult replacing sugar as you have to add additional fillers).

Oh really? I guess that I'd seen somewhere that you can't bake with it, then ASSUMED (we all know what happens when one assumes :-) that it shouldn't be heated. This is GOOD to know - so in the future, I will use powdered stevia with the cinnamon when I make cinnamon roasted almonds. I might make cocoa roasted almonds too, but then my home roasted are so much better than store bought, that I would probably just eat the WHOLE container in one sitting if I did that :-)

Let me know if you try it. I've only baked with it once, and I didn't taste the

results so I can't vouch for it. :)

I read somewhere that you can't heat stevia, so maybe they were wrong.

I sometimes add cocoa powder and cinnamon to my almonds before roasting. I like

the richer taste as opposed to adding it in the Vitamix when blending the nuts.

Mine are very tasty and better than the ones from Sam's. My neighbor gave us

some to try and they tasted artificial.

The sources I've read say it is stable up to just under 400* F.

I think that is one of the beauties of Stevie. It is very heat tolerant. GinnySent from Ginny's iPhoneOn Feb 3, 2012, at 1:08 PM, "krysmh2" <krysmh@...> wrote:

Just made some of this delicious nut butter and shared it with my sister. I roasted my almonds with a little bit of walnut oil. I used 73% dark dagoba chocolate chips. It is sooo good!Mimi

I beg to differ, use white chocolate chip morsels, lol. I have even been toying

with adding butterscotch.....Bottom line, whatever you crave will be delicious.

Holiday time they sell the andes chocolate mint bits and have added that to a

frappachino but not sure I would want it in a nut butter. Mint and nuts anyone?

be a bit too sweet. Just thinking out loud.
