I didn't have a quantity either...I just put the coconut in and whirled it up with the tamper, and then added the oil and to get the consistency that wasn't thick paste, but creamy. When I get around to making these, I was thinking of making a plate of finely chopped nut. When the coconut Bites are done blending,

to remove it use a baller scoop. they come in different sizes.

Then put the balls of bites in the nuts and roll them to cover them, then move to the tray.

Good idea Lucile. I have 2 different sizes of those scoops.My

question to Lea Ann is, are they firm enough to do this as they come

out of the VM?

I think they would have to be soft enough to get the nuts to stick to the balls. Then harden them in the fridge.

When I made them, I made the mixture thinner than that (with coconut oil) and it poured into the miniature muffin tins...so, you'd need to leave the mixture much thicker to do it with the balls. I use that cookie scoop all the time. I also use it to form meatballs.

I have another one that is slightly larger, by 1 teaspoon I think. I just almost

never use the regular ice cream scoop for anything but ice cream.

I use the larger ice cream scoop size when I make veggie patties.  It is just the right amount then I flatten them with a fork to regular hamburger size.
