This one was posted in my produce coop's weekly newsletter. Gotta admit, I

haven't tried it....I don't really like fruit-based dressing. But for those who

do, it might be fun.

Kiwi Salad Dressing

& #9702;4 kiwis

& #9702;1/4 cup olive oil

& #9702;1/4 cup white wine vinegar

& #9702;1/2 tsp dry mustard

& #9702;1 tsp sugar (optional)

Peel the kiwis and cut into slices. Mix all ingredients in a blender untill

smooth. Store in the refrigerator. This dressing is great over spinach salad

with pomegranates and diced chicken. It also is delicious as a sauce for fish,

baked or grilled. 1/28//12
