We are stricly gluten free, so we sub all sorts of flours-my favorite is a blend of equal parts red quinoa, buckwheat, and gluten free oats, but I also use brown rice, bean or other flours. They are all pretty interchangeable, and you might just need to tweak to find a blend you like.
