I grind all of my grains in the Vitamix dry container. We are stricly gluten

free, so we sub all sorts of flours-my favorite is a blend of equal parts red

quinoa, buckwheat, and gluten free oats, but I also use brown rice, bean or

other flours. They are all pretty interchangeable, and you might just need to

tweak to find a blend you like. You can see a video of my brown rice crackers

on the video link at http://www.mymealmasters.com In the video, I am making

crackers, but you can use the same method and use it as a nice bread if you just

don't dehydrate it-delicious either way, and with any blend of flours.
