Guest guest Posted February 1, 2012 Report Share Posted February 1, 2012 2 servings, enough to be a meal in itself with bread and perhaps a green salad 1/2 T butter 2 oz onion 1 T ginger, very well washed, peel if desired, finely chopped 3/4 lb winter squash (acorn, butternut, etc.) (could instead use carrots, raw or roasted), roasted 1-2 T whiskey 4 c chicken/vegetable broth 1 rib celery 1 t minced garlic 2 1/2 T lemon juice 1 c thick yogurt (such as Greek or make your own with double strength milk, not the kind thickened with gelatin) 3/4 t freshly ground coriander 3 - 4 T finely minced cilantro Place all, except yogurt, coriander, and cilantro, into large VitaMix carafe and process on HIGH until steaming. Add yogurt, coriander, cilantro, and salt/pepper to taste. Process briefly and serve. Variations: Roast garlic and/or onion with squash and use to taste instead of raw.
