I do make jam and jelly in the Vitamix. I also make homemade pectic from the

peels of apples and pears. I will try to put together a recipe to post to the

links (I don't do recipes, I just toss stuff in, but will try to come up with

reasonable measurements, lol) I use tapioca starch as a thickener, so it isn't

a " traditional " recipe, but delicious just the same.

I did curd in the Vitamix, both lemon curd and orange curd. Delicious.

I use between 3 and 4 egg yolks to 1/2 cup lemon juice a little bit of butter. I

let it run for 4 1/2 minutes... Then I normally take its temp. I want it to be

180 degrees.
