I offer it for sale on my website at http://mealmasters.webs.com/apps/webstore/ I make fresh rice crackers every day by grinding rice flour in my Vitamix-there is a video on the link above. As Lea Ann said, if you have the Vitamix, a good dehydrator and Rene's book, you have nutrition NAILED! The Excalibur is a wonderful investment, but the Nesco is a wonderful starter unit, or for anyone who is just doing smaller batches-it still does a LOT of food, but takes up much less space...and is quieter. As for the reason pineapple gets so crispy, seems I read somewhere that the natural enzyme that it contains (bromelian-great for digestion) dehydrates the natural sugars in it where it becomes so crispy. I will have to check into recipes to get started. I love kale chips, but have a hard time finding kale in my area. I also love pineapple, in any form.
