Just so you know, the Vitamix will incorporate air into your dressing helping it

to emulsify-I make dressings then store them in a mason jar or glass cruet so I

can just give them a quick shake before using. I find it makes quite a

difference to use the Vitamix-seems to help them bind better.

I love Caesar dressing and would love to be able to make a good one

(tried and true by someone I know).

Thanks , I was just in fooling around with my Everyday Caesar and the

liquids were emulsified nicely and holding together. Of course the mashed egg

york and other ingredients were at the bottom of the bowl. I thought then that I

should Vitamix it and see how it does. I think I'll go do that now.
