I can vouch for the iSI-wonderful gadgets! I have the large one like he is using in the video, and the mini whip cream foamer-both are great. Before I got my Sodastream, I used a iSI soda siphon. I love and recommend their products. I think HSN or QVC carries them from time to time.Sent from my iPadOn Mar 14, 2012, at 5:33 PM, Terry Pogue <tpogue@...> wrote:

Okay, this video provides some really important information. This is making a foam using the Vitamix and the iSI device.

I've been very interested in making Espumas. Particularly a salt cod espuma. as an hors d'oeuvres.

I make fruit flavored whipped cream to top desserts in the 1 quart iSI. I don't

have the Thermos but the regular one. The company rep told me they were the same

and restaurants and caterers like the thermos simply because it kept the stuff

hot.

By the way, I froze some ice cream I made in the Vitamix until it was rock hard.

Took it out at dinner. By the time we had finished our dinner it was exactly

like it was when I first took it out of the VitaMix. That Xanthan Gum is magical

stuff. So now if I need to make several batches of it for a dinner party I can

make it ahead of time and freeze it. Just take it out an hour before I want to

serve it. Great.
