Try putting yellow squash in the smoothies. Virtually no taste and very smooth texture. Also camouflage the green color of the green smoothies by adding frozen  blueberries and/or grape juice.

My daughter has been vegetarian since she was very young, but she absolutely

despises bananas...in any form. Every now and then, she will mix one in a

smoothie, but even then, it has to be the small fingerling bananas, and she only

has them when she feels the need for a boost of potassium. (she is almost 18

now) One way to interest your little fella, is to go to the library or a book

store and choose a good cookbook about smoothies (or even veggies) and the two

of you sit and choose recipes together, then hit a local farmers market and

choose your veggies together. Then take it a step further and let him help in

the process of making them-kids are far more likely to consume foods they helped

to make. Hiding the veggies from him just teaches him deception, and is likely

to make him mistrust future smoothies. Like most kids, he probably just has his

mind set that ALL veggies are gross. My suggestion would be to not even

mention the veggies at first...just go to the library and pick out one that HAS

lots of veggies. Books have a way of making them look soooo much better!

Making it an event that you share is likely to help him overcome any

preconceived notions about it, and it will be good bonding for you both. Once

he gets in the spirit, encourage him that TOGETHER, you will try something you

have never had before...perhaps an exotic fruit, like a carambola (star

shaped-very cool) or an interesting vegetable that neither of you have had.

The cookbook should give you some ideas. Although my daughter was only 5 or 6

when she CHOSE to be vegetarian, it was after us looking through cookbooks at

the library and trying some of the recipes that she made the choice. I have

involved her in cooking since she was big enough to stand on a stool next to me,

and she has always been willing to eat what she helped prepare. Your son is at

a PERFECT age to do that, and by making it a bonding thing and fun activity, he

is less likely to resist. Popsicles are also a good place to put veggies-just

freeze leftover smoothes!

Oh, I meant to mention too, that ice cream made in the Vitamix SHOULD be

encouraged for kids to eat for breakfast! They think it is " cool " that mom

gives them ice cream, mom knows that the ice cream is loaded with nutrition! My

daughter was raised on pumpkin pie ice cream for breakfast and snacks-she just

loved it! (still does) Nothing but pureed pumpkin (FULL of nutrients) honey or

agave, pumpkin pie spice, and a little rice or nut milk-yum! Also good as a

popsicle. You can easily add in a carrot or squash, or some nuts or cooked

beans for an extra boost of nutrients.

Thank you everyone for the great ideas. Squash, Avacado, going over cookbooks,

pumpkin pie smoothies and pumpkin ice cream for breakfast!! All great ideas.

I grow tons of yellow squash, and my favorite summer soup is JUST

squash...buzzed up with a little sea salt, tiny bit of water if needed. I steam

the squash lightly before putting it in the Vitamix. It is nice with herbs or a

splash of cream or rice milk, but I like the lightness of just the squash

without much else-works for zuchinni too.
