If I were making it, I would use just enough liquid to reach the consistency I want, and skip the starch, which to me would make it goopy anyway! I often make cheese fondue...with JUST cheese, tiny splash of rice or sunflower milk,, herbs, sea salt, etc. I see no need for a thickener at all. Just like with the cauliflower soup, you control its thickness by the amount of liquid used. You could add a few sunflower or pumpkin seeds or some nuts to thicken it further, if needed, or even some cooked beans. > > Here's the recipe. I will see if indeed starch when I reach that point and add it if I need it. Don't want to miss the wonderful flavor of wine & cheese.
