Is there a substitute for potato starch? Hate to go buy it for one

recipe, but this sure looks good.

SEVERAL good subs...tapioca starch, cornstarch, or NO starch...just cut down on

the liquids! If I were making it, I would use just enough liquid to reach the

consistency I want, and skip the starch, which to me would make it goopy anyway!

I often make cheese fondue...with JUST cheese, tiny splash of rice or sunflower

milk,, herbs, sea salt, etc. I see no need for a thickener at all. Just like

with the cauliflower soup, you control its thickness by the amount of liquid

used. You could add a few sunflower or pumpkin seeds or some nuts to thicken it

further, if needed, or even some cooked beans.

I will skip the apple juice and use wine instead of beer. I will see if indeed

starch when I reach that point and add it if I need it. Don't want to miss the

wonderful flavor of wine & cheese.

I have made it with wine before, very nice indeed. I have also made cheese

fondue with beer, but not being a beer fan, I found it a bit strong. These

days, I stick to rice milk or such, but OH, the memories of fine wine, lol.

That makes sense. A VM would make it smooth and not grainy I should

think.
