P.S. If I had fresh cranberries, I would have chopped them up at variable 1-2 at the same time that I was mixing up the egg mixture.

Coconut flour needs a *lot* of binding agent (egg or chia gel) in order to not end up with a crumbly, dry finished product. You also use a lot less, as it absorbs a lot of moisture.

Here's a recipe that's a great example: http://www.freecoconutrecipes.com/index.cfm/2012/1/13/lemon-cranberry-coconut-muffins

They're super tasty, too; I've made them multiple times with various fruits. I love that their both dairy and gluten free. :-)

But it takes 7 eggs for only 3/4 cup coconut flour, and you still end up with a dozen muffins. The coconut flour is like a sponge to the wet ingredients. If you sub two or three cups of coconut flour into a "normal" muffin recipe, it won't be edible.

Cabbage is DELICIOUS roasted or baked. I throw whole heads in my solar oven often and slow roast them-great for soups. You can make an amazing vegetarian gravy from purple cabbage by just thickening the cooking juice with a little tapioca starch-makes the most stunning color!Sent from my iPadOn Mar 24, 2012, at 6:09 PM, Velda <solomon@...> wrote:

I like cabbage, though have not roasted or baked. I use it in soups

and sausage and sauerkraut and of course in smoothies. I just am not

sure how it would taste in a muffin. LOL

Pink gravy from purple cabbage. On that I am not sure, would have to

be convinced that pink is a good color for a gravy when I am used to

having brown or white gravy. haha

I had some in the house. The kind from the store is MUCH finer than anything I could make from the left overs from making coconut milk. I've tried that. What I've made in my dehydrator is good, but NOT FINE like flour - more like a "meal".

Coconut flour needs a *lot* of binding agent

(egg or chia gel) in order to not end up with a

crumbly, dry finished product. You also use a

lot less, as it absorbs a lot of moisture.

Here's a recipe that's a great example: http://www.freecoconutrecipes.com/index.cfm/2012/1/13/lemon-cranberry-coconut-muffins

They're super tasty, too; I've made them

multiple times with various fruits. I love that

their both dairy and gluten free. :-)

But it takes 7 eggs for only 3/4 cup coconut

flour, and you still end up with a dozen

muffins. The coconut flour is like a sponge to

the wet ingredients. If you sub two or three

cups of coconut flour into a "normal" muffin

recipe, it won't be edible.

Ok, good answer, now I know to use coconut for other things and buy

coconut flour. Thanks Lea Ann.

OK - I made these (see post below) this

morning and they are AWESOME (to me at least :-)  I am

eating them right now!

Here is the original recipe:

Servings: 12

Preparation Time: 20 minutes

7 eggs

1 cup fresh cranberries (I chopped them up in

the food processor)

1 lemon, zest and juice

1/4 cup shredded coconut (unsweetened)

1/2 cup melted coconut oil

1/4 cup maple syrup

3/4 cup coconut flour

2 teaspoons vanilla

1/2 teaspoon sea salt

1 teaspoon baking powder

Preheat oven to 350 degrees F.

Mix all ingredients until well

combined. Bake in greased muffin tins for about 20

minutes.

As usual, I used the recipe as a "suggestion" and

worked with what I have on hand.

I only had 4 eggs left, and one was a banty egg,

so I dumped all four into the Vitamix.

The eggs came almost to the one cup line, so I

poured coconut oil in until the mix rose up to the

one cup line.

I juiced a lemon (didn't mess with the z! est)

and added the juice of the lemon.

I didn't have any cranberries.

I didn't have any shredded coconut.

I used about 20 drops of NuNaturals Vanilla Dog

Alcohol Free Stevia ($5 off of a first order of

NuNaturals at http://www.iHerb.com

if you use code ZIC184 - Shipping is Free if your

order is above $20!) instead of maple syrup.

I ran all of this on variable speed 1 until mixed

up then put it all in a mixing bowl and...

I didn't measure the coconut flour, just put in

what I thought was a little more than half of 3/4 of

a cup.

I shook my Sea Salt shaker a couple of times into

the mix

I added some baking powder :-)

Stirred, then put the mix into a stoneware muffin

pan coated with melted butter (made in the Vitamix

;-)

Super crumbly, and IMO delicious!  Imagine what

they would taste like if s! omeone followed the

recipe!

So glad you liked them!

I toss the whole lemon in the vitamix and buzz it on high with the coconut oil

when I make these, and then turn it down and add everything else. I put the

fruit (cranberries, blueberries, just whatever I have on hand) in last on a low

speed (speed dependent on whether or not I want them chopped or just mixed in).

The batter smells so good with the whole lemon!

I've decided that the vitamix is the way to go with all the coconut flour

recipes. Coconut flour tends to clump a lot because of how fine and absorbent it

is, but it's not a problem on variable 4. :-)

I'm pretty able to handle many tastes that can be problematic for "some" others (like bitter greens and Stevia), but for some reason, I've never been able to like much more than a "touch" of lemon (or any citrus) peel (or zest). There is another demonstrator who uses 1/2 of a whole lemon in her sorbet at shows. I've tried it, and really don't like it.But I always try things out first, so next time I make these, I'll try a whole lemon just to see how it turns out! Also, I'll get my ingredients lined up, and follow the recipe more closely :-)
