If I had fresh cranberries, I would have chopped them up at variable 1-2 at the same time that I was mixing up the egg mixture. I just am not sure how it would taste in a muffin. LOL Pink gravy from purple cabbage. The kind from the store is MUCH finer than anything I could make from the left overs from making coconut milk. I've tried that. What I've made in my dehydrator is good, but NOT FINE like flour - more like a "meal". I toss the whole lemon in the vitamix and buzz it on high with the coconut oil when I make these, and then turn it down and add everything else. I put the fruit (cranberries, blueberries, just whatever I have on hand) in last on a low speed (speed dependent on whether or not I want them chopped or just mixed in). The batter smells so good with the whole lemon! I've decided that the vitamix is the way to go with all the coconut flour recipes. Guest guest Posted March 26, 2012 Report Share Posted March 26, 2012 I'm pretty able to handle many tastes that can be problematic for "some" others (like bitter greens and Stevia), but for some reason, I've never been able to like much more than a "touch" of lemon (or any citrus) peel (or zest).There is another demonstrator who uses 1/2 of a whole lemon in her sorbet at shows.
