Hi Donna,

You are probably right--for thickening. Some people use stearic acid for a

thickener, but I don't. Some people use cetyl alcohol to thicken. If you

want to list your recipe, then maybe we can help.

You can also use steric acid for this as well.

I've used guar gum in place of xanthan and it seemed to work with no

problems.

What do you use stearic acid for???

Xanthan gum - is this powder or a liquid? I had the Recipe to make strawberry

ice cream and this was in the Recipe. 2C berries, 2tsp. stevia, 1/2 tsp

Xanthan gum, 2 tbsp. Agave, 4 tsp. Lemon juice and 3 tsp water. I found the

Xanthan gum at a store $13.00 for a 1/2 lb. bag.

That's frozen fruit. I didn't use lemon juice or water but I used about 1/4 cup

of cream, 1/2 teaspoon Xanthan gum (it's a powder) sugar ... I think I probably

used several T because we like our ice cream sweet. Then pound the day lights

out of the frozen fruit being sure you do all four corners until you think the

VM is going to fly apart. It changes sounds when it's all done. It sounds like

gears thumping...bumping....it's hard to describe but you have to go by sound

since its not liquid enough to be that clover leaf shape. I've given this

recipe/technique to three friends and they have all been amazed. Ivete took hers

to her brother's house to make the ice cream for his kids and her brother

wouldn't let Ivete take the VitaMix home, pleading with her to leave it with him

for just one week. <g> I'd say I've made a few sales for you Lea Ann with this

recipe. Now all I have to do us convince them to call or email you. I'm doing my

best.
