Piña Colada ice cream. Did you know I would say that's. <teehee> I did discover

yesterday that you can use fresh but frozen pineapple making it easier to do

quickly. I think I told everyone but not sure.

My new thing to try is the Cheese Fondue in the Vitamix. The recipe calls for

apple juice but I'm using my house wine, Chimney Creek Sauvignon Blanc. Report

later.

These people have teased me unmercifully for spending so much money on a dumb

OLE BLENDER... so I want them to eat those words LITERALLY..heheheh...

All suggestions welcome.. ..

Oh Terry was also thinking of doing a Chocolate Fondue in there as well but not

sure if Ice Cream would be more impressive or the Fondue ???

That was Mousse au Chocolate and it is really designed to be done in an iSI gun

and altho it's possible in the VitaMix it's not going to impress as much as

almost any ice cream as long as you use that little bit if Xanthan Gum. That

prevents ice crystals from developing and gives it that creamy mouth feel. That

will blow them away.

I agree with you, I think the mist impressive would be a great fruit ice cream.

You do need the Xanthan gum but you can get it fast from Amazon or whole foods

carries it.

But what I would do is give them a meal where many things are done or partially

done in the VM.

How about starting with that wonderful hummus recipe. You know do that with

canned chickpeas. Put them and that 1/4 cup while sesame seeds in with the

garlic clove... Talking with them all the while about the great movie you just

saw or the book you are reading. Keep up the small talk and ask questions while

you make a great platter of hummus, feta cheese and kalamata olives. Then while

you are all snacking on that with fresh warmed Pita. Make a great soup in the

VM. Say that cauliflower soup with three cheeses. Depending on what you are

doing for dinner you night want to casually peel some garlic in the VitaMix or

grind some popcorn to make polenta.

You get my drift? If you tell them how great it is they will probably have to

hold their position on how foolish you were to spend that much money on a

blender. But if you just not say anything but integrate the VM into a great

social event. Who knows they might even buy one, in which case give them Lea

Ann's phone number. <g>

Terry Now that is an IDEA>...let them watch while I make them drool over the

great food.. hmmmmmm got to prep a meal plan ..

I have already got the xantham so covered for the ice cream.

Love the hummus idea and the soup would be great.. as we will prob be eating on

the lanai so the sound wouldnt' be so intrusive.. Never have made polenta..

only kind we ever had in our ITALIAN household was from the grocery store

already pre made. can you beat that one ?? hehehe..

My grandmother use to slice it like a med thick pancake and layer it in a

casserole with some light tomato sauce and cheese over it.. Not my favorite but

suspect that was more what the southerns called MUSH.. vs the real polenta. My

grandmother ran a business and worked many hours so she learned some shortcuts

that were not always the best. I need to retry polenta and see if I would like

it from scratch better.. But from POPCORN??? really I must have missed that

post... will have to go on a search ..

An easy way to impress them would be to print out this word document and let them see how many ways the machine can be used…

A really impressive Ice Cream is the Almond/Pecan "Nut Butter Ice Cream" (shows them two functions in one recipe)If it were me, I'd have the almonds and pecans already roasted, and then just tell them, "I'm going to whip up a quick batch of almond pecan butter for our family, (you are welcome to taste some of course :-), but after I am done, I'm going to turn the almond/pecan butter that is left in the container into a delicious Nut Milk Ice Cream for you guys!"Also, having a nice jar of salsa that you've made previously on hand (mentioning casually that you made it in the Vitamix), and perhaps a batch of hummus ;-) would help show them the versatility of the machine. First I roast the almonds and pecans:- Place 2-3 cups of almonds and 2-3 cups of pecans in a large zip lock bag and pour oil in 1 Tbs. at a time and squish around until all of the nuts are coated. I like coconut oil for this as it is not damaged by high heat.- Spread them out on a cookie sheet in a single layer (I use parchment paper because my cookie sheet is aluminum)- bake in a PREHEATED oven at 350° for 15 minutes (be there when the timer goes off, because it is easy to quickly burn the nuts - check them at 13 minutes)- allow them to coolTo make the Nut Butter Ice Cream:- leave a LOT of Almond/Pecan Butter in the container.- add sweetener of your choice (since you are trying to impress, you might go with a thick date syrup which you inform them you made yourself in the VM)*- another possibility for sweetener could be 1/4 cup of Maple Syrup (the sweetener choices are endless really)- the sweetener above should come to about the 1/4 cup line.- add Heavy Whipping Cream to the 1 cup line- add frozen ice cubes made from Heavy Whipping Cream (enough to reach the 4 cup line) Reserve some extra "Cream Cubes" in case you need them- add 1 tsp. of Vanilla- optional - add a few shakes of cinnamonYou could use ice cubes or milk cubes instead of the heavy whipping cream, but since we are trying to impress… ;-)Also, if you have a thickener of some kind (for example, Agar Agar or Glucomannan Powder) /links/Foods_and_Supplement_or_Additive_Recomme_001327185766/ adding a small amount (perhaps a tsp.) gives the ice cream a much more commerce "creamy" mouth-feel.To make a Thick Date Syrup:- add 2-3 cups of pitted dates into the Vitamix machine- add water to just the top of the dates (or a tad less). Adding more water = a thinner "syrup"- if you add 5-6 drops of Stevia, it won't be enough for anyone to taste the bitterness, but it will really enhance the sweetness of the Date Syrup

Yeah, that popcorn thing turned me around. From I think. Well, I made it

and it was so much fun. I make my polenta a little different most of the time.

I boil 3 cups of chicken stock and sprinkle in 1/2 cup cornmeal (from now on

home ground) whisking all the while, then I sprinkle in 1/4 cup masa harina and

after that is incorporated I turn the heat to very very low and cover it. Cook

for oh…. maybe 15 minutes, then I add a big blob of butter and sometimes a

little splash of cream if I think it's a little thick. It all depends on how I'm

going to use it. As a soft polenta, no cream. If I want a polenta to chill and

cut and fry, no cream. After I add the butter and cream I will cook it an

additional 10 minutes or until I am happy with the mouthfeel of the polenta.

The masa harina gives it a kind of corn tortilla flavor, not a lot but just a

background note. I like it a lot and serve it with many southwestern dishes.

Now I'm in a grinding mood. After got me grinding popcorn, I remembered

asking and Lea Ann I think it was told me to use the dry container to make

powdered sugar so I did that. LOVED that. Now after Lea Ann's ice cream using a

nut butter I'm going to do that.

Today I'm doing a Frappicino that someone posted. I froze the coffee yesterday.

I'll let you know how I like it. I changed some of the ingredients to ones that

I use. It used a low fat dairy which I rarely use and a sugar substitute which I

never use. but it's the same recipe just using my everyday stuff.

Oh do I use the wet container for the nut butter?

For the ice cream? I use 1/2 teaspoon when I'm doing 2 cups of frozen fruit. I'd

up it to 1 teaspoon if doing a 4 cup recipe.

I haven't made 4 cups but I know 1/2 t works for 2 cups fruit.
