Hello ,In my experience, with 4 boys in the house (one of which is 50 years old ;-) who all like peanut butter, it will last in the fridge for months, but you are right, it gets hard to spread.If you leave some out on the counter (small amounts) it is very spreadable and it takes several days for the oil to start separating. It shouldn't take long for you to be able to discover what amount to leave out that will get consumed before there is a lot of oil separation. But be forewarned - if it isn't hidden, you go through it faster when it is visible :-)

I never refrigerate mine. Even before I started making my own and bought the

natural peanut butter, I always left it out. If I don't go overboard, mine

probably has lasted at least a few weeks. Same with the almond butter.
