If you are using the Vitamix, you won't need to sub anything for the potato

starch-its purpose is to make it creamy and thick, the Vitamix will do that just

fine! Just a side note, you might want to do a little research on soy...many of

us have found that rice milk, almond milk, nut or grain milks are a better sub

than soy, which is controversial for many reasons. Not saying you SHOULDN'T

drink it, just that you might want to research it to decide if you want to. I

am personally allergic to soy, so I avoid it at all costs, and many people are

finding that soy is contributing to the development of allergies, so just a

heads up. All types of milk subs are also easily made in the Vitamix. To

answer your direct question about a sub for potato starch, should you chose to

use one, would be tapioca, chia, flax, sunflower seed, agar agar, etc., but

those aren't typical ingredients to have around the house either, lol.
