Hi, I'm trying to make coconut butter and not having much success. I just put two pictures up in the Photo section in a folder mared Questions from Terry.

Could you take a look at it and tell me if this is the way it's supposed to look?

I put 2 packages of coconut flakes in the VM wet container. Turned it on high and used the tamper. It ran with me pushing all four corners until it was quite warm. I am not getting anything that looks like butter. Have I just not done it long enough. It has been running for at least 5 minutes.

Terry,

Check the fat content on the coconut before you buy it and get the one with the highest fat content. Some of the coconut flakes you get have been pressed for the oil before you get it.

I made it several times using just one bag of coconut but tried to make it with two bags at once and the motor kept overheating and stopping even though I added about six ounces of coconut oil. The coconut was getting too hot so I just stopped that batch and used the finely ground coconut for something else.

But would the sugar change how it's done or the texture?

Hmmm, Perhaps I'll put some oil in it and try again.

But, I'm not sure if it's worth it since I really had no idea what I was going

to do with it afterward. Maybe I'll put this coconut or some of it in ice cream.

You never know … might make something tasty. Or infuse it into cream for a

coconut espuma or even coconut meringue.

Terry,  I believe it would absolutely change the texture and ability to make a creamy, smooth coconut butter.  I haven't made it but do have some coconut butter on hand, and from reading all the discussion about finding the right flakes with enough oil in them, etc. it gives me the impression that it wouldn't work well with the sweetened, dessicated coconut.  Coconut butter is yummy as is though if you want to try again with plain flakes.
