OH, how I miss being able to use my mini pie maker-used to use it all the time for pot pies, meat pies, etc. Love that gadget! Now, being gluten free and vegetarian, it doesn't get used. I love making mini quiches in the pie makers.. and was lazy.. so I used 2 slices of bread as the crustfor the berry pie.. just cut them out and buttered them.. and filled as usual put the top crust on on and sprinkled a little sweetener on top of that one that I put some berries in I just put the quiche in the slot without a crust So I would have a quiche in one slot and the berry pie in the other... wasn't bad..now not as good as a real pie crust but I had NO problem scarfing it down...heheheh. > > > > I am in the mood for some pies... FIRST, jazz up your crust by using fruit juice, tomato juice, veggie juice, broth, etc. instead of water-WHAT a difference! (you can use any of your leftover smoothies too)! I used to freeze cubes of left over juice in ice cube trays, then thaw them out to add to my pie crust-tomato/basil being my favorite crust for savory pies-makes the crust a lovely pale red color-very nice! My VERY favorite pie was a sausage pie made with an apple crust-using apple juice for the liquid for the crust. The slight hint of sweet apple against the sausage filling was stellar! My filling was just browned up bulk style sausage, chopped apples, bit of white sauce, salt and pepper (you can also use condensed soup, such as cream of mushroom for the sauce, but lots of salt in canned soups) I would mix that up and put it in the apple juice crust-YUM! Drooling just thinking of it! I also liked " steak and ale " pie-stew chunks of beef, mushrooms, carrots, onion in dark ale (beer) until tender, thicken the sauce with a bit of flour, put in pie shell (the tomato one was great here) Chicken pot pie, or creamed chicken is also lovely in a pie shell! (drooooool) For sweet pies, I loved sliced peaches simmered in cream, then put in the pie shell with a bit of Birds Custard (British thing, don't know if you could find it here in the states) in the mix and drizzled over the hot pie-yum! Pureed pumpkin, butternut squash, or sweet potato is delicious with a touch of cream and pumpkin pie spice for a filling. Another favorite was stewed fruit-apples, pears, peaches, apricots, raisins, etc. stewed in a bit of fruit juice, thickened slighly with a bit of tapioca and added to an apple crust. I have seen the Custard in a can but can't remember if they have the powder.. will chk on my nx grocery run. While Devon is tasty, it is no comparison to Birds custard, which is simply delicious, smooth and creamy. I was raised on it! I no longer use it, since it is cornstarch based, and I am allergic to corn, but I have devised a fairly reasonable version of my own using tapioca starch...but it is NOT Birds! Yummm! I have made ice cream custard from it, by freezing the cubes and buzzing them up in the Vitamix, have drizzled it over baked apples, apple dumplings, plum fritters, poached pears, etc-LOVELY served hot over any stewed or baked fruit. I used to use it in place of pancake syrup, with some fresh berries stirred in to it. MAJOR comfort food when just eaten steaming hot out of a coffee mug, especially when you don't feel well or have had dental work done.
