I just steam them, puree them with herbs, sea salt, etc. I spread the puree on crackers, and it is lovely. I wonder if the dips are similar? I recently adapted this recipe for sweet potato curry dip http://www.wearenotmartha.com/2012/02/sweet-potato-curry-dip/?utm_source=feedbur\ ner & utm_medium=feed & utm_campaign=Feed%3A+wearenotmartha+%28We+are+not+Martha%29 I used garbanzo beans in place of the white beans ( because I already had some made) and left out the feta . I need to try out 's cracker recipes. We went to Sonoma store last Sunday and the gal made a cracker from a pie crust like dough with rosemary and garlic in it, pressed into a roll, then cut in slices and baked. Sweet Potato & Chic Pea dip 1 medium sweet potatoes or yam cleaned and peeled 1 15 ounce can of chickpeas drained 2 cloves of fresh garlic cleaned 1 teaspoon salt 1/2 cup extra virgin olive oil dash of cayenne parsley for garnish Optional: hot sauce Microwave potato till soft around 6 minutes. Cool. Scoop out the potatoes and place in the food processor. Rinse chickpeas, add garlic, salt, and the chickpeas along with oil to food processor to make a smooth consistency. Place in a bowl, drizzle with more olive oil and hot sauce if using.
