I made it with Strawberries but next it's going to be Mango as I happen to have several large cans of mango puree from my last Indian Dinner Party blow out. I used knox plain gelatin instead of the sheets. terry Mango Espuma (Strawberry) Published in: dorchestercollection Ingredients 2 cup mango puree 1/2 cup sugar 1/4 cup glucose syrup 1/2 cup water 3 gelatin leaves Instructions To make the sugar syrup, mix caster sugar, water and glucose syrup in a pan and bring to a boil. Soak the gelatin leaves in cold water for 3 to 4 minutes. Remove syrup from heat. While hot, add the soaked gelatin leaves and stir until dissolved. Add the mango puree to the syrup and gelatin mixture, mix well. Pour mixture into an Espumas gun or cream whippers, crew top on tight and insert nitrogen gas cartridge. Shake well and chill. Continue to shake even 20 minutes while chilling up to 2 hours. Shake well prior to foaming over dessert such as a bowl of tropical fruit.
