Going to make some Red Pepper Hummus and this ... for our Saturday evening snacks/ dinner.. we like to snack vs eat dinner on Saturday nights while movie watching. and Later a sm amt of some kind of Fruit Ice Cream.. Can't WAIT for SATURDAY. Creamy Citrus Salad Dressing as Dip with Artichokes. Makes 6-8 Servings Ingredients: 1 large orange and 1 large lemon, peeled 1/4 cup raw, unsalted cashews 1/4 large onion 2 garlic cloves 2 large dates, pitted 2 tablespoons vinegar (your choice, suggestion was White Balsamic vinegar) Directions: Combine all ingredients in a Vitamix blender and whirl until smooth. Speaking of pressure cookers another of my fav appliances. The artichoke cooks in 6 minutes on high heat which was a lot less time than steaming it 45 minutes or longer on the stovetop then USE the Citrus Dressing as a dip with it Quote Link to comment Share on other sites More sharing options...
