Question re cream soups

A couple of questions regarding the white sauce recipe in the book.

I usually make the white sauce and add carrots to make creamed

carrots....what's left over I add some milk and make it into a cream of

carrot soup.

Is it possible to double the recipe in the book or is that too much to do at

once?

Also, is there an alternative to the white sauce that would be healthier?

I haven't tried it but have been told that if you grind any white bean into flour and combine it with your favorite broth in the vitamix it gives you a very nice white sauce.

not so much...Beans need to be thoroughly cooked to avoid digestive issues. They wouldn't have enough time to cook through, even as a flour, in the short time it takes to make asauce. I kind of thought this would be your answer. I can't imagine using

dry, uncooked bean flour in anything that would not get longer

cooking time and probably plenty of moisture as they cook.
