I just cut my first watermelon of the season and was wondering if I could do something else besides throwing away the rind. I have made watermelon sorbet today after planting some sprigs of grass in my front yard in dead spots. It really tasted good. I did as Lea Ann does, just watermelon from the frig and some frozen and it was wonderful. I froze the rest in little popsicle holders. Both my men loved it too. I was wondering about watermelon pickles - do you think you could substitute stevia for the sugar? I have never made any pickles before and would never use sugar. But it sounds like a good idea to use up some of the rind. I have blended up the rest of the rind in scraps to feed my grass sprigs today. I figure natural fertilizer is better than chemical.
