Guest guest Posted February 11, 2012 Report Share Posted February 11, 2012 Avocado Dressing And Avocado Chicken Salad - Serves 4 Published in: Everyday Food, page 19 Publish Date: Jan/Feb 2012 Ingredients 2 Avocados 1 cup buttermilk 1 scallion (white and light green parts only) 1/4 cup thinly sliced parsley leaves -- packed 3 tablespoon lemon juice 1/2 cup water salt and pepper Instructions Blend all in food processor or blender until smooth or desired consistency. Very good for an Avocado Chicken Salad 2 chicken breasts, boneless and skinless, cooked and shredded 2 stalks celery 1 large shallot, finely chopped 1 avocado, diced small 3/4 C Avocado Dressing salt and pepper Refrigerate in a sealed container for up to 3 days. As a sandwich in good sourdough bread or tucked into a lettuce left on a luncheon plate.
