I avoid eggs, so I just omit them or add a tiny bit of tapioca starch or flax gel to make my pasta more elastic. I use a kitchenaid pasta attachment for my shapes. You can add a bit of buzzed up fresh tomato juice, cabbage juice, etc. to add color, nutrients and flavor to your dough. > > I make homemade pasta all the time, but have never tried " healthy " pasta. In stand mixer add flours, olive oil and salt and mix until a soft dough forms. You can do this by hand if you like. Use a pasta maker to create any shape pasta yo want!
