Wonderful! You can also do this with gluten free flours to make lovely gluten

free pasta. I avoid eggs, so I just omit them or add a tiny bit of tapioca

starch or flax gel to make my pasta more elastic. I use a kitchenaid pasta

attachment for my shapes. You can add a bit of buzzed up fresh tomato juice,

cabbage juice, etc. to add color, nutrients and flavor to your dough.

I used my normal recipe, but included one full bag of raw spinach buzzed up with

the eggs in the vitamix before mixing all ingredients together. ( I also used

whole wheat flour in addition to the other flours do make the dough come

together as it was too wet with the addition of the spinach- sorry, I did not

keep track how much, just add as necessary)

> In vitamix combine the spinach with the eggs until liquified. In stand mixer

add flours, olive oil and salt and mix until a soft dough forms. You can do

this by hand if you like. Use a pasta maker to create any shape pasta yo want!
