Today'sRecipe of the Day!Each day during the week we will provide you with a delicious recipe to make eating healthy easy!* ENJOY!

Mango PuddingServes: 3 Preparation Time: 10 minutesIngredients: 1/4 cup raw almonds2 ripe mangoes, peeled & cut into pieces1 banana3 dates, pitted1/8 cup coconut, unsweetened shredded1/2 teaspoon vanilla1/4 cup currants1/8 teaspoon cinnamon

Instructions:Grind almonds in a Vita-Mix or other powerful blender and then add mangoes, banana, dates, coconut and vanilla and blend until smooth and creamy. Place in a bowl, stir in currants and sprinkle with cinnamon. Chill for at least 2 hours before serving.
