I freeze everything in glass mason jars-just be sure to leave a little headspace

to allow for expansion. I have been freezing in glass for years, with only one

or two breakages, usually through my own stupidity, lol

LOL, I should have mentioned to flash freeze things first by laying out

individual slices on a cookie sheet, freezing, then transfering to the jar-that

will make them easier to get apart when you need smaller amounts. I keep the

top shelf of my chest freezer free of storage, just so I can slip a cookie sheet

in as needed.

I actually discovered I had an ALLERGY to certain plastics and silicone years

ago, so for me, it was a necessity to try to eliminate plastics as much as

possible...and it is IMPOSSIBLE, to say the least! I have wide mouth mason jars

that have certainly made it easier though. I not only store stuff in mason

jars, but I also cook stuff in them in both my solar oven and slow cooker. I

have two large cabinets in my kitchen dedicated strictly to glass jars, lol.

I have two sizes of attachments (regular and wide mouth) that will seal the

mason jars using the food saver-just wonderful for storing in the jars. I think

they are about 10 bucks each, or maybe even for the set. I got mine at a

kitchen store.

I LOVE cooking in mason jars! I started doing it years ago in order to keep my

allergy friendly foods safe from other things, and it became a fun way for use

to cook, especially in the solar oven. We do " pizza in a jar " , where you layer

rounds of pizza crust with sauce and desired toppings, various soups, stews,

casseroles, and our ALL time favorite, " dessert in a jar " , in which we layer

things like brownie mix with raspberries, orange marmelade, etc. Somewhere, I

have a file I made of various recipes, and I will see if I can find it and post

it.

Yes, there is a reason I don't mix it in the Vitamix-it is sort of a sandy

mixture, a lot like making a sandcastle, and I find that mixing it in the jars

makes it easier to unmold them after they are cooked. I have mixed it in the

Vitamix, but the mixture was so thick it was hard to get it all out of the

container too, lol.

I sometimes use more water, sometimes less, depending on how crunchy/crispy I

want that batch of crackers to be (denser batter makes a more dense cracker,

more water makes a crispier cracker. You should unmold them from the jars while

they are still warm-just cool them until you can comfortably hold the jar

without it being too hot. Sometimes I need to run a butter knife around the jar

to loosen them a bit, but mostly they will just pop right out of the jar (I DO

hope you are using a wide mouth jar)? If they are squishy when you go to slice

them, then they weren't cooked enough. How long did you cook them for, and did

you have water coming up halfway up the side of the jars?
