Brown Rice Pudding with Pear Sauce

MIX TOGETHER in large bowl:

2 cups brown rice cooked

¼ tsp. cinnamon

½ cup dates chopped

¼ - ½ cup diced pineapple

½ cup raisins or cran-raisins

BLEND in blender until smooth:

½ cup raw cashews (rinsed)

2/3 cup water

1 Tbls. honey or maple syrup

Pour blended mixture over rice mixture, stirring until mixed well.

Put in well oiled 8 ½ x 11 dish.

Cook at 350 degrees for 30 minutes with foil over it so it won't dry out.

PEAR SAUCE topping for Brown Rice Pudding

½ cup cashews

¼ tsp. salt

1 tsp honey or maple syrup

1 can pears (in 100% fruit juice), drained

Use juice from pears with water to equal 1 cup of liquid.

BLEND topping mixture until smooth.

SERVE: Brown Rice Pudding warm with Pear Sauce.

Optional: Add 1 – 2 Tbls. of Chia seed for added nutrients… fiber, protein,

omega 3.

This dish is high in fiber.
