I haven't made lemon curd in the Vitamix with sugar, but what I made Tuesday had a different texture from what I used to make on the stove. It did however thicken perfectly and was good. I used the stevia equivalent of 1/3 c of sugar (doubled, since I made a double batch) and it was perfectly tart/sweet, at least for our taste. Yesterday evening I was cleaning out the leftovers and found myself with a wad of pie dough, lemon curd, and a block of very firm drained yogurt. I rolled the dough out and cut it into maybe 5 " squares, splopped a chuck of yogurt and some lemon curd on each one, sprinkled that with some chopped hazelnuts, tucked the dough around them to make them into packets and baked them about 20 minutes or so....very tasty, like little individual lemon cheesecakes.
