Anyone have any guesses as to what liquid and how much should be added? Thanks. For any " cream " type soup that I make, espcially cauliflower, I use little if any liquid-usually just enough to get the machine going, and then I use the cooking water. By having less liquid, you get a rich creamy soup without adding any cream! Guest guest Posted June 7, 2012 Report Share Posted June 7, 2012 I am pretty sure it is in the links, but it is so easy, you don't need a recipe. I make this almost daily-my favorite staple food. I just steam up a whole head of cauliflower until just tender, using just enough water to produce steam. If I plan on only making one batch of soup, I put the rest of the cauliflower in a mason jar and store it in the fridge for the next day. For my " cream " soup, I just blend up the cauliflower with enough of the cooking liquid to get the machine spinning, and a bit of sea salt. You can add rosemary, thyme, curry, or any her you wish, but I like it plain. The lack of liquid is what makes it creamy-it really is just pureed cauliflower thinned to whatever soup consistency you like. I sometimes add a handfull of homemade cheddar cheese while blending, as well as adding a bit of shredded cheese to the bottom of my serving bowl, so it melts when I pour the hot soup over it. I gardnish it with sunflower sprouts-delicious! Super easy, super healthy. If you want different flavor, you can use chicken of veggie stock instead of plain water to steam it in. You can garnish with chopped parsley, croutons, walnuts, or whatever tickles your fance-I like my homegrown sprouts! I also grow my own sprouts in a pie pan...sometimes I have more than I can use in a salad or a topping, and throw them in my morning smoothie. There are a number of brands and at least two Solar Societies (one, the International Solar Society here in Sacramento not from from me) where you can learn a lot. Look at you tube and there are man videos. It is a simple way to cook with no power other than the sun. I have cooked brown rice, hard boiled eggs (actually baked eggs), chicken teriyaki, bbq chicken (which I later shredded for sandwiches), a whole pumpkin last fall, mixed veggies, brownies, and maybe something else I have forgotten. It takes only patience and a very small attention (swivel it once in a while so it stays facing the sun). Ask me anything or ask , who cooks almost everything she eats in hers. But, I did use roasted cauliflower (as another post I cannot find had mentioned). I added 1/2 roasted red bell pepper (skin removed) and threw in a couple handlfuls of carrots (raw) since I had them and didn't want them to go to waste. Plus a can of chicken broth and add'l water for my desired consistency. I was a little heavy handed on the black pepper when I roasted the cauliflower - so the soup was very " pepper-y " - but that was OK! It was AWESOME! I would never have thought about doing it if not for the recipe here! Yes, it looked like the cauliflower would be an excellent " thickener " for other soups.
