I can't do oils either. You could try using a gel, such as chia or flax, since

the oil is likely just a binding agent. How have you been doing?

daughter and some high calorie for me. While Coconut oils and butters are

supposed to be GP friendly, even a drop puts me in the hospital almost

immediately. Some of the recipes look amazing and I would really like to try

them. (From Chocolate Covered 's blog) Down to some of her Larabar

lookalike recipes to cakes call for it. Does anyone know what I could substitute

in place of the oils? Or butter? I CAN do all other butters, but of course my

crazy gut won't accept the important benefit of Coconuts now. Any ideas please?!

I have finally gotten some answers. I have POTS which is what was causing the

syncope, chest pains and S.O.B. Only 200,000 people have it so I feel blessed

to be with the best Neurologist. GP (Gastroparesis) is generally delayed gastric

emptying n is very painful. However, my entire intestinal tract is paralyzed.

They've also found ground-glass in my lungs but right now I'm to depleted for

ANY surgery. Despite ALL our efforts, I am having to increase medications to get

enough protein in so they can put a PICC line and a Jtube in. They labeled it

grade 4 and terminal but I'm not quitting yet. I've continued to lose weight,

down to 109 again so definitely have a long road ahead but I refuse to accept

terminal. I have two babies and a wonderful hubby that won't let me cave. It

wasn't the answers we wanted but it was answers and God has a plan for me. I can

say, my beloved VM has kept me off the feeding tube for nearly a year. My dr's

now recommend it to all GPers for tube prevention. :)

Love and prayers,

And this to shall pass; He brings things to pass not to stay!

Your woderful attitude will get you through it. I was told almost 10 years ago

to " get my affairs in order " , and wasn't expected to make it through the year,

but here I am, healthier than ever. Like you, I simply refused to accept what

they were telling me. You will kick this!

Oh , I am sending lots and lots of prayers your way.  Regular dairy butter can be substituted for coconut oil if you can use that.  Also palm shortening - but that might give you the same reaction?   Other oils could be used in place of it depending on the consistency you are looking for.  Often other nut butters can be used in place of coconut butter, but there again, it depends on the consistency and final product you are going for.  Maybe if you post a couple recipes, we could help more.

First, thank you all for your kind words. I think of you all often and check in

EVERYDAY to see new ideas even if I'm not up to chatting. You've all been such

an inspiration to my family and myself. As I told someone else, I save your kind

words as place for my family to look back on. I've received cards, calls and

letters from sooo many of you and for that I was humbled. Sometimes you forget

that even though you've never met people, there are still a lot of good ones out

there you feel like you've known forever. I keep this little scrap book so one

day my children can look back and see that not only did they love me through

this, so did many other's. I am eternally grateful to all of you. That being

said, my VM serves two purposes. Since I'm home bound I spend a lot of time

making new healthy recipe's for my family here. (We recently downsized to a

smaller him closer to my dr's, family and to help save money being I still have

no insurance) My daughters lost 11 pounds, but everyone else b/w 5-10 in 14 days

today. I make these delectable smoothies, freeze them and they come pick them up

every 4 days. They each have a magic bullet to reblend. They do it to help my

babygirl, but for theirselves too. A total of 12 people so far, and they buy the

fruits and veggies in return for my work. I buy the special things since its

right next door to the hospital I check into weekly for fluids and labs. So

GREAT idea to post a few of the recipe's to see what you guys think I could

replace the oil or butter with. You'll see, in a few of them it even seems to be

flavor.

Ok in addition a few more questions, when you check these out can you tell me if

it would be ok to use agave in place of solid sweeteners? Also, Guar gum will

help keep a smoothie from freezing so solid correct? I bought some at my health

store (they allow us to fill our own baggies so I started with a small amount to

try out). How much would I use for a frozen smoothie or ice cream?

Now an example recipe I am dying to try, but need y'alls help:

Chocolate Nutella Fudge

Chocolatecoveredkatie.com/2012/05/21/triple-chocolate-nutella-fudge/

Raw Chocolate Fudge Cake or Frosting (I need frosting)

Chocolatecoveredkatie.com/2011/02/04/raw-chocolate-fudge-cake/

You'll see tons of stuff on her her page but these are two examples.

Oh and one Im dying to try:

Chocolate-Strawberry Truffle Pie

Chocolatecoveredkatie.com/2012/02/16/chocolate-strawberry-truffle-pie/

Thanks in advance guys :-)

And this to shall pass; He brings things to pass not to stay!

Oh, I'm thinking of you , and your wonderful spirit is so inspiring, and brings tears to my eyes. I'm glad you have had the VM to keep you going without a feeding tube all this time, and it now will be recommended for others with the same situation. May God look over you and give you strength.Ginny

Hi ,Wow, that sounds like a fantastic system you have going with your Vitamix.  I hope you don't wear yourself out, and hopefully the people you are making for get healthier!   You are the definition of a trooper.  Thank you for sharing your story and beautiful spirit with us all.  You really are special.

Some substitutions I would keep in mind would be applesauce (or any pureed fruit) in place of coconut oil, unless you can use butter.  If you don't need it to be solid at room temperature, you could use pretty much any oil you agree with and that works with the flavors in the recipe (or the pureed fruit.)  If you do need it to be more solid, I would use butter or nut butters or combine them with the oil or fruit.  For the coconut butter, again I would do nut butter, and maybe a little less of the oil or fruit if you combine it with that, or just straight nut butter.  Macadamia nuts are pretty mild and yummy.  OR - one thing that might work really well, depending on the recipe - is soaked cashews.  (Soak for 1-6 hours, drain water, then blend.)  Avocado would be delicious and add creaminess, which coconut butter does as well.  I'm sure others will have ideas too, so please anyone chime in if you do!

On the chocolate strawberry truffle pie (Whew!  These desserts look good don't they!)  It already has cashews, so you could up the cashews some more until you get the consistency you need, or add the same amount of butter as you would coc oil, or try with applesauce or avocado!  If adding agave, you may not need to add anything.  If it was me, I'd probably up the cashews a bit, add agave and call it good.

For the raw chocolate fudge cake, I would try cashews or cashew butter or macadamia nuts or butter.  You could increase the banana a bit depending on the consistency.

The triple chocolate nutella fudge would also be delicious with either cashew butter or macadamia butter, or you could try peanut butter, sun butter, etc!  I hope that helps!

I also googled coconut oil subs and came across this in case it helps: http://holdthetoast.com/content/substitute_for_coconut_oil

The guar gum I am not sure about - I know some on list have been saying that or xanthan gum help.  I know a little alcohol is supposed to help, but I never have that around so don't know about that either.  I haven't tried gelatin, but I've heard using that can help as well and I've been wanting to try it.  Agave could definitely be used in place of the sweeteners.  And in that case, I would go a little less on other liquids or fruit purees.  I hope this is not too vague.  I'm sure you can find some delicious variations as you play around a bit!

First, thank you all for your kind words. I think of you all often and check in EVERYDAY to see new ideas even if I'm not up to chatting. You've all been such an inspiration to my family and myself. As I told someone else, I save your kind words as place for my family to look back on. I've received cards, calls and letters from sooo many of you and for that I was humbled. Sometimes you forget that even though you've never met people, there are still a lot of good ones out there you feel like you've known forever. I keep this little scrap book so one day my children can look back and see that not only did they love me through this, so did many other's. I am eternally grateful to all of you. That being said, my VM serves two purposes. Since I'm home bound I spend a lot of time making new healthy recipe's for my family here. (We recently downsized to a smaller him closer to my dr's, family and to help save money being I still have no insurance) My daughters lost 11 pounds, but everyone else b/w 5-10 in 14 days today. I make these delectable smoothies, freeze them and they come pick them up every 4 days. They each have a magic bullet to reblend. They do it to help my babygirl, but for theirselves too. A total of 12 people so far, and they buy the fruits and veggies in return for my work. I buy the special things since its right next door to the hospital I check into weekly for fluids and labs. So GREAT idea to post a few of the recipe's to see what you guys think I could replace the oil or butter with. You'll see, in a few of them it even seems to be flavor.

Ok in addition a few more questions, when you check these out can you tell me if it would be ok to use agave in place of solid sweeteners?  Also, Guar gum will help keep a smoothie from freezing so solid correct? I bought some at my health store (they allow us to fill our own baggies so I started with a small amount to try out). How much would I use for a frozen smoothie or ice cream?

Now an example recipe I am dying to try, but need y'alls help:

Chocolate Nutella Fudge

Raw Chocolate Fudge Cake or Frosting (I need frosting)

Chocolatecoveredkatie.com/2011/02/04/raw-chocolate-fudge-cake/

You'll see tons of stuff on her her page but these are two examples.

Oh and one Im dying to try:

Chocolate-Strawberry Truffle Pie

Thanks in advance guys :-)

Oh , I am sending lots and lots of prayers your way.  Regular dairy butter can be substituted for coconut oil if you can use that.  Also palm shortening - but that might give you the same reaction?   Other oils could be used in place of it depending on the consistency you are looking for.  Often other nut butters can be used in place of coconut butter, but there again, it depends on the consistency and final product you are going for.  Maybe if you post a couple recipes, we could help more.

(From Chocolate Covered 's blog) Down to some of her Larabar lookalike recipes to cakes call for it. Does anyone know what I could substitute in place of the oils? Or butter? I CAN do all other butters, but of course my crazy gut won't accept the important benefit of Coconuts now. Any ideas please?!

,I have been thinking about you and hope your are not in the hospital or anything.  I wanted to add that cocoa butter can also be used as an alternative to coconut oil, butter and coconut butter.  Here is a recipe using it for white chocolate if you are interested:

http://www.ournourishingroots.com/honey-sweetened-white-chocolate-and-gaps-white-chocolate-chips/ She has a link there for making regular chocolate as well.
