making salad dressings in the vitamix

Hi,

I want to make some salad dressings in the vitamix. I was wondering if there are some tips/tricks to doing so, and is there a way to get the dressing to not separate (ie: stay emulified)? I don't want to add a lot of extra ingredients that might change the taste or texture too much. I also wanted to know if you mix a fresh batch (for example: a basic balsamic vinegrette) of dressing, how long before the oil/vinegar starts to separate? I was hoping that someone who has made a lot of dressings with the Vitamix might be able to give me some good advice. Thanks in advance.
